  • 3 tablespoons flour
  • 2 ½ cups whole milk or half-and-half

  • ¼ cup grated Parmesan cheese
  • 4 ounces cream cheese, softened
  • ¾ cup ricotta cheese
  • 1 egg
  • 8 dried lasagna noodles, cooked
  • 2 cups cooked chicken, cut into bite-size pieces
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (for topping)
  • 4 cups baby spinach leaves

Instructions

  1. Preheat oven to 400°F (200°C) and lightly oil an 8×8-inch baking dish.
  2. In a saucepan, melt the butter over medium heat. Add garlic and cook for 30 seconds. Stir in flour to make a roux.
  3. Gradually whisk in milk and cook until the sauce thickens. Remove from heat and stir in Parmesan, cream cheese, and spinach until wilted.
  4. In a bowl, whisk together ricotta cheese and egg until smooth.
  5. Spread ¼ cup of sauce in the baking dish, then layer with 2 noodles, ¼ cup ricotta mixture, ⅔ cup chicken, ⅔ cup mozzarella, 1 tablespoon Parmesan, and ½ cup sauce. Repeat layers twice more.
  6. Top with remaining sauce and Parmesan. Bake uncovered for 20–25 minutes until bubbly and golden.
  7. Let cool for 15–20 minutes before slicing and serving.
