- 4 (6-ounce) boneless skinless chicken breasts
- 1 teaspoon Italian seasoning (or mix of oregano, thyme, basil, rosemary)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- 1/4 cup finely chopped yellow onion
- 1/2 cup sun-dried tomatoes, thinly sliced
- 2 cups baby spinach
- 1 1/2 cups heavy cream
- 1/4 cup freshly grated parmesan cheese
Instructions
- Season chicken breasts on both sides with Italian seasoning, salt, and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
- In the same skillet, add 1 tablespoon oil and sauté onions for 2–3 minutes until softened.
- Add garlic and sun-dried tomatoes, cooking for another minute until fragrant.
- Stir in the spinach and cook until just wilted.
- Pour in the heavy cream and stir in the parmesan cheese. Simmer gently until the sauce thickens slightly.
- Return the chicken to the pan and cook for 5 more minutes, spooning sauce over the top until chicken is heated through and fully coated.
- Serve warm with your favorite sides such as mashed potatoes, pasta, or rice.

- Use the oil from the sun-dried tomato jar for extra flavor.
- Do not boil the cream sauce to prevent curdling — keep the heat low to medium.
