  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/4 cup finely chopped yellow onion
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 1/2 cups heavy cream
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Season chicken breasts on both sides with Italian seasoning, salt, and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add 1 tablespoon oil and sauté onions for 2–3 minutes until softened.
  4. Add garlic and sun-dried tomatoes, cooking for another minute until fragrant.
  5. Stir in the spinach and cook until just wilted.
  6. Pour in the heavy cream and stir in the parmesan cheese. Simmer gently until the sauce thickens slightly.
  7. Return the chicken to the pan and cook for 5 more minutes, spooning sauce over the top until chicken is heated through and fully coated.
  8. Serve warm with your favorite sides such as mashed potatoes, pasta, or rice.

  • Use the oil from the sun-dried tomato jar for extra flavor.
  • Do not boil the cream sauce to prevent curdling — keep the heat low to medium.
