- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- 1/4 cup finely chopped yellow onion
- 1/2 cup sun-dried tomatoes, thinly sliced
- 2 cups baby spinach
- 1 1/2 cups heavy cream
- 1/4 cup freshly grated parmesan cheese
Instructions
- Season both sides of each chicken breast with Italian seasoning, salt, and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add chicken and sear for 3–4 minutes on each side until golden. Transfer to a plate.
- In the same skillet, add the remaining tablespoon of oil and the chopped onion. Sauté for 2–3 minutes until softened.
- Add the garlic and sun-dried tomatoes, cooking for another minute until fragrant.
- Stir in the spinach and cook for about 1 minute, until it just begins to wilt.
- Pour in the heavy cream and add the parmesan cheese. Stir and bring to a gentle simmer until the sauce thickens slightly.
- Return the chicken to the skillet and coat it in the sauce. Simmer for 5 minutes or until the chicken is heated through and cooked to 165°F (74°C).
- Serve warm with your choice of sides such as pasta, rice, or mashed potatoes.
