  • 4 (6-ounce) boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/4 cup finely chopped yellow onion
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 1/2 cups heavy cream
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Season both sides of each chicken breast with Italian seasoning, salt, and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add chicken and sear for 3–4 minutes on each side until golden. Transfer to a plate.
  3. In the same skillet, add the remaining tablespoon of oil and the chopped onion. Sauté for 2–3 minutes until softened.
  4. Add the garlic and sun-dried tomatoes, cooking for another minute until fragrant.
  5. Stir in the spinach and cook for about 1 minute, until it just begins to wilt.
  6. Pour in the heavy cream and add the parmesan cheese. Stir and bring to a gentle simmer until the sauce thickens slightly.
  7. Return the chicken to the skillet and coat it in the sauce. Simmer for 5 minutes or until the chicken is heated through and cooked to 165°F (74°C).
  8. Serve warm with your choice of sides such as pasta, rice, or mashed potatoes.

Notes

  • For extra flavor, use the oil from the sun-dried tomato jar instead of plain olive oil.
  • Substitute heavy cream with coconut cream or cashew cream for a dairy-free version.
