  • 4 oz fresh spinach
  • 1 (12 oz) jar quartered artichoke hearts in water, drained
  • 4 cloves garlic, minced
  • 1 Tbsp butter
  • 1/2 cup chicken broth
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 pinch crushed red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts to an even 3/4-inch thickness and season with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Sear chicken for 5–7 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
  4. Pour in chicken broth, scraping up any browned bits. Add cream cheese and sour cream, whisking until smooth.
  5. Stir in milk until the sauce is creamy and well-blended.
  6. Add Parmesan cheese, crushed red pepper flakes, and black pepper. Simmer for 2 minutes.
  7. Stir in chopped spinach a handful at a time until wilted, then add chopped artichoke hearts.
  8. Return chicken to the skillet and spoon sauce over each piece. Simmer for 2–3 minutes to combine flavors.
  9. Serve hot with pasta, rice, or crusty bread.
