Ingredients
Scale
- 1 tablespoon olive oil
- 1 lb. ground beef (preferably lean)
- 4 large russet potatoes, peeled and diced (about 2 lbs.)
- 1 medium yellow onion, diced
- 2 large carrots, diced small
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried parsley
- 4 cups chicken broth
- 2 cups whole milk
- 1/4 cup all-purpose flour
- 1 lb. Velveeta cheese, cut into chunks
- Optional toppings: shredded cheddar cheese, chopped green onions
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef, onion, carrots, salt, pepper, and dried parsley. Cook until beef is browned and onions are translucent. Drain excess grease if needed.
- Add minced garlic and cook for 2 minutes until fragrant.
- Sprinkle flour over the beef and vegetables, stirring well to coat evenly. Cook for 1–2 minutes to eliminate raw flour taste.
- Pour in chicken broth and deglaze the pot by scraping the bottom with a wooden spoon to release browned bits.
- Add diced potatoes, milk, and Velveeta cheese. Bring to a boil, stirring continuously to help the cheese melt.
- Reduce heat to low and let the soup simmer for 30–35 minutes, stirring occasionally, until potatoes and carrots are tender and soup has thickened.
- Serve hot with optional toppings like shredded cheddar cheese and chopped green onions. Pair with crusty bread for dipping.
Notes
- Dicing carrots small ensures they cook fully in the simmer time.
- Stir constantly after adding milk and cheese to prevent scorching.
- Deglazing the pot adds deep flavor from the browned bits.
- This soup is not ideal for freezing due to its high dairy content.
- For a thicker soup, mash a portion of the cooked potatoes before serving.
