  • 3/4 cup raw unsalted pecans, finely chopped
  • 2/3 cup dried cranberries, finely chopped
  • 2 tbsp fresh thyme leaves
  • Honey, for drizzling
  • To serve: crackers or toasted baguette slices

Instructions

  1. Line a baking sheet or plate with parchment paper.
  2. Finely chop pecans and dried cranberries using a sharp knife.
  3. Remove thyme leaves from their stems.
  4. Combine chopped pecans, cranberries, and thyme leaves on a large plate or shallow bowl and mix evenly.
  5. Scoop goat cheese into small portions (about 2 teaspoons each) and roll into smooth balls using your hands.
  6. Roll each cheese ball in the nut-cranberry mixture, pressing gently so the coating sticks.
  7. Place coated cheese balls on the lined tray and refrigerate for at least 30 minutes to firm up.
  8. When ready to serve, drizzle with honey and plate with crackers or toasted baguette slices. Enjoy!
