  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 3/4 cup orange juice
  • (Optional glaze) 1 cup confectioners’ sugar + 2 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Stir in cranberries, pecans, and orange zest; set aside.
  3. In another bowl, beat together sugar, butter, and egg until smooth and creamy. Mix in orange juice.
  4. Gradually fold the dry mixture into the wet ingredients until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for about 1 hour, or until the loaf springs back when lightly touched and a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  8. (Optional) For glaze: whisk confectioners’ sugar and orange juice until smooth, then drizzle over the cooled loaf.

  • Frozen cranberries can be used without thawing.
