These Cottage Cheese Egg Bites are soft, creamy, and packed with protein. Made with eggs, cottage cheese, bacon, and Colby Jack cheese, they’re the perfect easy, grab-and-go breakfast that’s healthy, low-carb, and ready in under 30 minutes.

- 7 large eggs
- 1 cup cottage cheese (small curd recommended)
- 1 cup shredded Colby Jack cheese
- 3/4 cup cooked bacon bits
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Cooking oil spray for greasing
Instructions
- Preheat the oven to 325°F (160°C) and generously grease a 12-cup muffin tin with cooking oil spray.
- In a large mixing bowl, whisk the eggs until yolks and whites are combined.
- Add the cottage cheese, shredded Colby Jack cheese, bacon bits, salt, and pepper. Mix well until evenly combined.
- Divide the egg mixture evenly among the 12 muffin cups, filling each about three-quarters full.
- Place a pan of water on the lower oven rack to help maintain moisture.
- Bake the muffin tin on the upper rack for 23–25 minutes, or until the egg bites are set and a toothpick inserted in the center comes out clean.
- Remove from the oven and let the egg bites cool for 2–3 minutes.
- Carefully remove them from the tin and serve warm. Store leftovers in the refrigerator or freezer for later use.
Notes
- Grease the muffin tin generously to prevent sticking.
- Use a silicone muffin pan for easier removal.
- Do not overbake—the egg bites should be set but still soft in the center.
- Add a pan of water in the oven to help maintain a moist texture.
- Store in an airtight container for up to 5 days in the fridge or 2 months in the freezer.
