Description

These Cottage Cheese Egg Bites are soft, creamy, and packed with protein. Made with eggs, cottage cheese, bacon, and Colby Jack cheese, they’re the perfect easy, grab-and-go breakfast that’s healthy, low-carb, and ready in under 30 minutes.


Ingredients

  • 1 cup cottage cheese (small curd recommended)
  • 1 cup shredded Colby Jack cheese
  • 3/4 cup cooked bacon bits
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Cooking oil spray for greasing

Instructions

  1. Preheat the oven to 325°F (160°C) and generously grease a 12-cup muffin tin with cooking oil spray.
  2. In a large mixing bowl, whisk the eggs until yolks and whites are combined.
  3. Add the cottage cheese, shredded Colby Jack cheese, bacon bits, salt, and pepper. Mix well until evenly combined.
  4. Divide the egg mixture evenly among the 12 muffin cups, filling each about three-quarters full.
  5. Place a pan of water on the lower oven rack to help maintain moisture.
  6. Bake the muffin tin on the upper rack for 23–25 minutes, or until the egg bites are set and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let the egg bites cool for 2–3 minutes.
  8. Carefully remove them from the tin and serve warm. Store leftovers in the refrigerator or freezer for later use.

Notes

  • Grease the muffin tin generously to prevent sticking.
  • Use a silicone muffin pan for easier removal.
  • Do not overbake—the egg bites should be set but still soft in the center.
  • Add a pan of water in the oven to help maintain a moist texture.
  • Store in an airtight container for up to 5 days in the fridge or 2 months in the freezer.
