- 4 cups corn kernels (from 4–5 ears of corn), reserve cobs for stock
- 4 oz bacon, chopped
- 1 large onion, finely diced
- 1 large carrot, diced
- 3 stalks celery, finely diced
- 1 lb Yukon gold potatoes, peeled and cut into 1/4-inch pieces
- 4 cups chicken broth
- 1 1/2 cups milk
- 1 cup heavy cream
- 2–3 tsp sea salt, or to taste
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 2 tbsp chives, chopped (for garnish)
Instructions
- Cut the kernels from the corn cobs and set aside. Place the bare cobs in a stockpot with chicken broth, milk, and cream. Bring to a boil, then simmer uncovered for 20 minutes to create corn stock. Remove and discard the cobs.
- In a Dutch oven, cook chopped bacon over medium heat until crisp. Remove bacon and reserve 2–3 tablespoons of bacon fat in the pot.
- Add onion, celery, and carrot to the bacon fat and sauté until softened.
- Stir in potatoes, corn kernels, salt, black pepper, and cayenne pepper. Pour in the prepared corn stock.
- Bring the mixture to a light boil, then reduce heat and simmer for 10–15 minutes, or until potatoes are tender.
- For a creamier texture, blend one-fourth of the soup and stir it back into the pot.
- Taste and adjust seasoning. Serve hot, garnished with crispy bacon and fresh chives.

- Use fresh corn for the sweetest flavor, but frozen or canned corn works well too.
- For a thicker chowder, blend a portion of the soup instead of adding thickeners.
- Reheat gently over low heat to prevent curdling of the dairy.
