These soft and chewy Cookie Bars are packed with rich chocolate chips and baked in one pan for an easy, crowd-pleasing dessert. With buttery flavor, golden edges, and gooey centers, they deliver all the classic taste of chocolate chip cookies in thick, sliceable bars.

- 2 1/4 cups (280g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup (170g) unsalted butter, softened to room temperature
- 1 cup (200g) packed light or dark brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 2 cups (360g) semi-sweet chocolate chips
- 1/4 cup (45g) chocolate chunks (optional, for topping)
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Fold in the chocolate chips evenly throughout the dough.
- Press the dough evenly into the prepared baking pan. Sprinkle optional chocolate chunks on top.
- Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
- Remove from the oven and allow the Cookie Bars to cool completely in the pan.
- Lift out using the parchment overhang, slice into squares, and serve.
Notes
- Measure flour properly by spooning and leveling to avoid dry Cookie Bars.
- Do not overbake; the center should look slightly soft when removed from the oven.
- For extra flavor, sprinkle flaky sea salt on top before baking.
- Store in an airtight container at room temperature for up to 5 days.
- Freeze individually wrapped bars for up to 3 months.
