Description

These soft and chewy Cookie Bars are packed with rich chocolate chips and baked in one pan for an easy, crowd-pleasing dessert. With buttery flavor, golden edges, and gooey centers, they deliver all the classic taste of chocolate chip cookies in thick, sliceable bars.


Ingredients

  • 2 1/4 cups (280g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (360g) semi-sweet chocolate chips
  • 1/4 cup (45g) chocolate chunks (optional, for topping)

Instructions

  1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Press the dough evenly into the prepared baking pan. Sprinkle optional chocolate chunks on top.
  8. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Remove from the oven and allow the Cookie Bars to cool completely in the pan.
  10. Lift out using the parchment overhang, slice into squares, and serve.

Notes

  • Measure flour properly by spooning and leveling to avoid dry Cookie Bars.
  • Do not overbake; the center should look slightly soft when removed from the oven.
  • For extra flavor, sprinkle flaky sea salt on top before baking.
  • Store in an airtight container at room temperature for up to 5 days.
