  • 3¾ cups powdered sugar
  • 1½ tablespoons whole milk
  • 1 cup sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter and sugar in a stand mixer until light and fluffy, about 3 minutes.
  3. Add egg, milk, and vanilla extract; mix until combined.
  4. In another bowl, whisk together salt, baking powder, and flour. Gradually add dry ingredients to wet mixture on low speed until fully incorporated.
  5. Using a 1½-tablespoon scoop, portion dough onto the baking sheet, spacing evenly.
  6. Bake for 10–12 minutes, or until edges turn golden. Cool cookies on the sheet for 3–5 minutes before transferring to a rack.
  7. To make frosting: Beat butter until fluffy, add vanilla, then gradually incorporate powdered sugar. Add milk until smooth and creamy.
  8. Assemble cookies into pairs. Spread or pipe frosting on one cookie, then sandwich with another. Roll edges in sprinkles if desired.
  9. Store in an airtight container at room temperature for up to 5 days.
