Instructions

  1. Wash and dice the russet potatoes into evenly sized cubes. Bring a pot of salted water to a boil and parboil the potatoes for 5–7 minutes until slightly tender but not fully cooked. Drain well and allow them to steam dry.
  2. Heat a large skillet over medium heat. Add olive oil and 1 tablespoon butter. Spread the potatoes in a single layer and cook undisturbed for 4–5 minutes to develop a golden crust.
  3. Flip the potatoes and add diced onion. Season with garlic powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Continue cooking, stirring occasionally, until potatoes are crispy outside and tender inside, about 10–12 minutes total.
  4. In a separate skillet, cook bacon over medium heat until crispy, about 6–8 minutes. Transfer to paper towels to drain excess grease.
  5. Whisk eggs with milk, remaining salt, and pepper. Melt remaining butter in a nonstick skillet over low heat. Pour in the egg mixture and cook gently, stirring slowly, until soft curds form and eggs are just set.
  6. Toast the bread slices until golden brown and spread with butter while warm.
