Description
A hearty Classic American Diner Breakfast Plate featuring crispy diner-style breakfast potatoes and onions, fluffy scrambled eggs, smoky bacon, and buttery toast. This comforting, traditional American breakfast is perfect for weekend brunch or a satisfying family morning meal.
Ingredients
Scale
- 2 large russet potatoes, diced into small cubes
- 1 medium yellow onion, diced
- 2 tablespoons olive oil
- 2 tablespoons butter, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 4 large eggs
- 2 tablespoons whole milk or heavy cream
- 6 slices bacon (or 4 breakfast sausage links)
- 4 slices sandwich bread or sourdough bread
- 1 tablespoon chopped fresh parsley (optional garnish)
Instructions
- Wash and dice the russet potatoes into evenly sized cubes. Bring a pot of salted water to a boil and parboil the potatoes for 5–7 minutes until slightly tender but not fully cooked. Drain well and allow them to steam dry.
- Heat a large skillet over medium heat. Add olive oil and 1 tablespoon butter. Spread the potatoes in a single layer and cook undisturbed for 4–5 minutes to develop a golden crust.
- Flip the potatoes and add diced onion. Season with garlic powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Continue cooking, stirring occasionally, until potatoes are crispy outside and tender inside, about 10–12 minutes total.
- In a separate skillet, cook bacon over medium heat until crispy, about 6–8 minutes. Transfer to paper towels to drain excess grease.
- Whisk eggs with milk, remaining salt, and pepper. Melt remaining butter in a nonstick skillet over low heat. Pour in the egg mixture and cook gently, stirring slowly, until soft curds form and eggs are just set.
- Toast the bread slices until golden brown and spread with butter while warm.
- Assemble the Classic American Diner Breakfast Plate by adding a generous portion of breakfast potatoes and onions, scrambled eggs, crispy bacon, and buttered toast to each plate. Garnish with chopped parsley if desired and serve immediately.
Notes
- Dry the parboiled potatoes thoroughly to ensure maximum crispiness.
- Avoid overcrowding the skillet to allow proper browning.
- Cook scrambled eggs over low heat for the creamiest texture.
- Reheat leftover potatoes in a skillet instead of a microwave to keep them crispy.
- You can substitute turkey bacon or plant-based sausage for a lighter option.
