Light, refreshing, and bursting with color, these skewers are a healthy and flavorful meal everyone will love.

Ingredients

Scale
  • 5 tablespoons Cholula® Green Pepper Hot Sauce
  • 1 medium orange, zested and juiced
  • 1 medium lemon, zested and juiced
  • 1 medium lime, zested and juiced
  • 2 tablespoons olive oil
  • 1 pound jumbo shrimp, peeled and deveined, tails on
  • 1 cup cherry tomatoes
  • 8 medium radishes, trimmed and quartered
  • 1 small green bell pepper, cut into 1-inch chunks

Instructions

  1. In a small bowl, whisk together Cholula Green Pepper Hot Sauce, orange, lemon, and lime zest and juices with olive oil. Reserve 1/4 cup of the marinade for glazing later.
  2. Place shrimp in a resealable bag or dish and pour in the remaining marinade. Toss to coat evenly, then refrigerate for 15 minutes.
  3. Thread shrimp, cherry tomatoes, radishes, and green bell pepper alternately onto metal skewers. Discard the used marinade.
  4. Preheat grill to medium heat. Grill the skewers for 7–9 minutes, turning occasionally, until shrimp turn pink and vegetables are lightly charred.
  5. Brush skewers with the reserved marinade during the final minutes of grilling. Drizzle with extra hot sauce before serving if desired.

Notes

  • Do not marinate shrimp for longer than 30 minutes, as citrus acid can overcook them.
  • Use metal skewers for even cooking and easy flipping.
  • To bake instead of grill, cook at 425°F (220°C) for 8–10 minutes.
  • Store leftovers in an airtight container for up to 2 days.
  • Pairs perfectly with coconut rice, grilled vegetables, or a fresh garden salad.
