  • 2 teaspoons ground cinnamon
  • 2 medium Granny Smith apples, peeled and chopped
  • 2/3 cup granulated sugar plus 2 tablespoons
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup milk plus 1 to 3 tablespoons (for glaze)
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick spray and line with parchment paper, leaving overhang for easy removal.
  2. Mix brown sugar and 1 teaspoon cinnamon in a small bowl; set aside.
  3. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon; set aside.
  4. In a large bowl, beat butter and remaining 2/3 cup sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
  5. Whisk flour, baking powder, and salt in another bowl. Gradually add to the butter mixture, alternating with 1/2 cup milk, mixing until smooth.
  6. Pour half the batter into the loaf pan, then add half the apples and half the cinnamon-sugar mixture. Repeat with remaining batter, apples, and cinnamon-sugar mixture.
  7. Use a knife to swirl the cinnamon-sugar mixture through the layers.
  8. Bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Cover with foil for the last 10 minutes if the top browns too quickly.
  9. Let the loaf cool in the pan for 15 minutes, then lift out using parchment and cool completely on a wire rack.
  10. For the glaze, mix powdered sugar with 1–3 tablespoons milk until smooth. Drizzle over the cooled bread and let it set before slicing.

Notes

  • Use Granny Smith apples for a tart contrast, or try Honeycrisp or Jonagold for a sweeter version.
  • Measure flour correctly by spooning and leveling to prevent dense bread.
