- 2 teaspoons ground cinnamon
- 2 medium Granny Smith apples, peeled and chopped
- 2/3 cup granulated sugar plus 2 tablespoons
- 1/2 cup (1 stick) butter, softened
- 2 large eggs, room temperature
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/2 cup milk plus 1 to 3 tablespoons (for glaze)
- 1 cup powdered sugar, sifted
Instructions
- Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick spray and line with parchment paper, leaving overhang for easy removal.
- Mix brown sugar and 1 teaspoon cinnamon in a small bowl; set aside.
- Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon; set aside.
- In a large bowl, beat butter and remaining 2/3 cup sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
- Whisk flour, baking powder, and salt in another bowl. Gradually add to the butter mixture, alternating with 1/2 cup milk, mixing until smooth.
- Pour half the batter into the loaf pan, then add half the apples and half the cinnamon-sugar mixture. Repeat with remaining batter, apples, and cinnamon-sugar mixture.
- Use a knife to swirl the cinnamon-sugar mixture through the layers.
- Bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Cover with foil for the last 10 minutes if the top browns too quickly.
- Let the loaf cool in the pan for 15 minutes, then lift out using parchment and cool completely on a wire rack.
- For the glaze, mix powdered sugar with 1–3 tablespoons milk until smooth. Drizzle over the cooled bread and let it set before slicing.

- Use Granny Smith apples for a tart contrast, or try Honeycrisp or Jonagold for a sweeter version.
