- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 3 ounces semisweet or bittersweet chocolate, melted

Instructions
- In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. Set aside.
- In a stand mixer, beat the butter on medium-high speed until smooth. Add the sugar and beat until light and fluffy, about 4 minutes.
- Add the egg and vanilla extract; mix until smooth. Blend in the melted chocolate.
- Reduce the mixer speed to low and add the dry mixture in two batches until fully incorporated.
- Divide the dough into two disks, wrap in plastic, and refrigerate for at least 1 hour or up to 3 days.
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Roll dough between floured parchment to 1/4-inch thickness. Cut into shapes using cookie cutters.
- Arrange cookies 1 inch apart on sheets and bake for 10–12 minutes, until tops look dry.
- Cool on sheets for a few minutes, then transfer to a wire rack to cool completely.
- Decorate with royal icing and sprinkles once cooled. Store in an airtight container.
