  • 3 tbsp (45ml) milk
  • 2 tbsp (25g) powdered sugar
  • 4 oz (115g) semisweet chocolate, finely chopped (for ganache)
  • 1/2 cup (120ml) heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla until smooth.
  3. Sift in cocoa powder, flour, salt, and baking powder. Gently fold until just combined.
  4. Pour batter into the pan, smooth it out, and bake for 20–25 minutes. Cool completely in the pan.
  5. Heat the milk until steaming, then pour over chopped chocolate. Let sit for 2 minutes and stir until smooth. Cool to room temperature.
  6. Whip heavy cream with powdered sugar until soft peaks form. Fold in the cooled chocolate mixture gently until fully incorporated.
  7. Spread the mousse evenly over the cooled brownie base. Refrigerate for at least 2 hours.
  8. For ganache, heat cream until simmering and pour over chopped chocolate. Let sit, then stir until smooth.
  9. Spread ganache over the mousse layer and chill for another hour until set.
