Ingredients

  • 1¾ cups granulated sugar (350g)
  • ½ cup vegetable oil (120mL)
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour (240g)
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 cup powdered sugar (120g)

Instructions

  1. In a large bowl, mix granulated sugar, cocoa powder, and vegetable oil using a hand mixer or stand mixer until well combined and shiny.
  2. Add eggs one at a time, beating after each addition. Then beat in the vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until fully incorporated.
  5. Cover the dough with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Place powdered sugar in a small bowl. Scoop chilled dough and roll into 1-inch balls.
  8. Roll each ball in powdered sugar until well coated and place 2 inches apart on the prepared baking sheets.
  9. Bake for 10 to 12 minutes until the edges are firm and the centers appear slightly wet.
  10. Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.

  • Roll in granulated sugar before powdered sugar for extra crunch.
