Instructions
- Place almond flour, salt, and butter in a stand mixer with a paddle attachment. Beat on medium speed for 3 minutes until coarse and crumbly.
- Add one egg and almond extract, mixing on low speed until combined.
- Sift together flour, sugar, and baking soda, then add to the mixer. Mix on low speed until a soft dough forms.
- Flatten the dough into a disc, wrap in plastic, and refrigerate for 2 hours.
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Roll dough into 3/4-inch balls and place 1 inch apart on the sheet. Flatten slightly into coin shapes.
- Press one sliced almond into the center of each cookie and brush tops with beaten egg.
- Bake for 13–15 minutes, or until edges are lightly golden. Cool on a wire rack before serving.
