Instructions

  1. In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, and cornstarch until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant and softened.
  3. Add ground chicken and cook, breaking it up with a spatula until no longer pink and lightly browned, about 5–6 minutes.
  4. Pour the sauce mixture into the skillet. Stir well to coat the chicken evenly. Simmer for 2–3 minutes to thicken slightly and blend flavors.
  5. Stir in chopped water chestnuts and green onions. Cook for another minute, then remove from heat.
  6. To serve, spoon a few tablespoons of the chicken mixture into each lettuce leaf. Wrap and enjoy immediately.
