Instructions

  1. Cook fettuccine in a large pot of salted water according to package directions. Drain and set aside.
  2. Slice chicken breast into thin strips and season with salt and pepper. In a large skillet, heat 2 Tbsp olive oil over medium-high heat and sauté chicken until golden and cooked through, about 5 minutes. Remove from pan and cover to keep warm.
  3. In the same skillet, add 1 Tbsp olive oil and butter. Sauté chopped onion for 3 minutes until soft, then add mushrooms and cook for 5–7 minutes, stirring often, until tender. Add garlic and sauté 30 seconds until fragrant.
  4. Pour in half and half, bring to a gentle simmer, and cook for 8–10 minutes until slightly thickened. Season with salt and pepper to taste.
  5. Return chicken and parsley to the pan. Add cooked fettuccine and toss to coat evenly in the sauce.
  6. Cover and let rest for 10–15 minutes off the heat to allow the sauce to thicken naturally. Garnish with more parsley before serving.
