Instructions
- Cook fettuccine in a large pot of salted water according to package directions. Drain and set aside.
- Slice chicken breast into thin strips and season with salt and pepper. In a large skillet, heat 2 Tbsp olive oil over medium-high heat and sauté chicken until golden and cooked through, about 5 minutes. Remove from pan and cover to keep warm.
- In the same skillet, add 1 Tbsp olive oil and butter. Sauté chopped onion for 3 minutes until soft, then add mushrooms and cook for 5–7 minutes, stirring often, until tender. Add garlic and sauté 30 seconds until fragrant.
- Pour in half and half, bring to a gentle simmer, and cook for 8–10 minutes until slightly thickened. Season with salt and pepper to taste.
- Return chicken and parsley to the pan. Add cooked fettuccine and toss to coat evenly in the sauce.
- Cover and let rest for 10–15 minutes off the heat to allow the sauce to thicken naturally. Garnish with more parsley before serving.
