Description
Cherry Pistachio Pinwheel Cookies are festive swirl cookies made with buttery dough, sweet dried cherries, and crunchy pistachios. These elegant, colorful treats are perfect for holidays or any special occasion, offering a balance of texture and flavor in every bite.
Ingredients
Scale
- 1 cup dried cherries
- 1 cup shelled pistachios
- 1/4 cup packed light brown sugar
- 2 sticks (16 tablespoons) salted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 3 cups all-purpose flour, plus more for dusting
- 1 container red, green, and white sprinkles
Instructions
- In a food processor, pulse dried cherries, pistachios, and brown sugar until finely ground but not clumped. Set aside.
- In a stand mixer, beat softened butter and granulated sugar on medium-high until light and fluffy, about 2 minutes.
- Add eggs, baking powder, and salt, and beat for 1 minute more. Gradually add flour, 1/2 cup at a time, until smooth.
- Cover dough and chill in the refrigerator for 1 hour.
- Divide dough in half. Roll each portion between two floured sheets of parchment paper into a 12-inch square.
- Remove the top parchment, spread half of the cherry-pistachio mixture evenly, and tightly roll the dough into a log using the parchment for support.
- Roll the exterior in festive sprinkles, wrap in parchment, and refrigerate overnight or at least 4 hours.
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
- Slice dough logs into 1/4-inch rounds and place about 1 inch apart on the prepared sheets.
- Bake for 8–10 minutes or until edges are lightly golden. Cool on wire racks before serving or storing.
Notes
- Chilling the dough overnight ensures perfect spiral shapes.
- Use dried cranberries if dried cherries are unavailable.
- Add a teaspoon of vanilla extract or citrus zest for extra flavor.
- Store cookies in an airtight container for up to 3 days or freeze for up to 2 weeks.
- Work quickly when rolling the dough to prevent tearing.
