  • 1 medium green bell pepper, diced
  • 2 small yellow onions, diced
  • 2 packets taco seasoning or 6 tablespoons homemade taco blend
  • 1 1/4 cups water, divided
  • 2 cups Bisquick
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces shredded cheddar cheese, divided
  • 4 ounces canned diced green chilies
  • 1/4 teaspoon black pepper
  • 14 ounces canned diced tomatoes, drained
  • 14 ounces canned whole kernel corn, drained

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13-inch casserole dish.
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess grease.
  3. Add diced onions, bell pepper, taco seasoning, and 1/2 cup of water. Stir and simmer for 10 minutes until veggies soften.
  4. In a bowl, combine Bisquick with 3/4 cup water to form a soft dough. Spread evenly in the casserole dish. Bake for 5 minutes.
  5. Spread the beef mixture over the crust. Top with drained tomatoes and corn.
  6. In a separate bowl, mix sour cream, mayonnaise, half the cheddar cheese, green chilies, and black pepper. Spread over the beef layer.
  7. Sprinkle remaining cheese on top. Bake uncovered for 30 minutes until bubbly and golden.
  8. Let rest for 7-10 minutes before slicing. Garnish with chopped parsley if desired.
