- 6 medium carrots, peeled and shredded
- 1 large apple, grated or julienned
- 1/2 cup diced celery (optional)
- 3/4 cup plain yogurt (or Greek yogurt)
- 1 teaspoon honey or maple syrup
- 2 tablespoons lemon juice
- 1 tablespoon chopped parsley
- Salt and pepper to taste
Instructions
- Peel and shred the carrots using a box grater or food processor.
- Grate or julienne the apple and immediately toss in lemon juice to prevent browning.
- Dice the celery if using.
- In a small bowl, whisk together the yogurt, honey or maple syrup, lemon juice, parsley, salt, and pepper.
- In a large bowl, combine the carrots, apple, and celery. Pour the dressing over and mix well.
- Cover and refrigerate for at least 1 hour to let the flavors meld.
- Serve chilled. Garnish with extra parsley or seeds if desired.
Notes
- Use Granny Smith apples for tartness or Fuji/Gala for sweetness.
- Substitute dairy yogurt with plant-based yogurt for a vegan option.
