Description

Burrata Bruschetta is a simple yet elegant Italian appetizer made with creamy burrata cheese, juicy tomatoes, fresh basil, and balsamic glaze served over crispy toasted bread. It’s quick, versatile, and perfect for gatherings or a light meal.

Ingredients

Scale
  • 1 baguette or Italian bread – sliced for the base
  • 2 balls burrata cheese – creamy topping
  • 2 cups cherry or heirloom tomatoes – diced or halved
  • 2 cloves garlic – for rubbing on toasted bread
  • Fresh basil leaves – for garnish and flavor
  • 3 tbsp extra virgin olive oil – adds richness
  • 2 tbsp balsamic glaze – sweet and tangy finish
  • Sea salt – enhances overall taste
  • Freshly ground black pepper – adds depth and balance

Instructions

  1. Preheat oven to 375°F (190°C) and slice the baguette into ½-inch slices.
  2. Place bread slices on a baking sheet, brush lightly with olive oil, and toast for 8–10 minutes until golden and crisp.
  3. While warm, rub each slice gently with a peeled garlic clove for subtle flavor.
  4. In a bowl, toss diced tomatoes with 1 tbsp olive oil, salt, and pepper. Let sit for 10 minutes to release juices.
  5. Spoon the tomato mixture over each toasted bread slice.
  6. Gently tear burrata into pieces and layer on top of the tomatoes.
  7. Drizzle with balsamic glaze and extra olive oil if desired.
  8. Finish with fresh basil leaves and a pinch of flaky sea salt. Serve immediately.

Notes

  • Assemble just before serving to keep bread from getting soggy.
  • Burrata tastes best at room temperature—remove from fridge 15 minutes before use.
  • Use the freshest seasonal tomatoes for the best flavor.
  • Substitute burrata with fresh mozzarella or whipped ricotta if needed.
  • Roasted or sun-dried tomatoes can add extra depth of flavor.
