  • 5 tsp baking powder (aluminum-free)
  • 3/4 tsp kosher salt
  • 4 tbsp unsalted butter, melted
  • 1/2 cup Frank’s Red Hot Original Sauce
  • 1 tbsp brown sugar
  • 1/4 tsp kosher salt (for sauce)
  • 1/2 cup crumbled blue cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 13 tbsp milk (to desired consistency)
  • 2 tbsp lemon juice
  • 1/2 tsp kosher salt (for dip)
  • Black pepper to taste
  • Celery sticks (for serving)

Instructions

  1. Preheat oven to 250°F (120°C) and position racks in the lower and upper thirds.
  2. Line a baking tray with foil, place a wire rack on top, and spray it lightly with oil.
  3. Pat wings dry or refrigerate uncovered overnight to remove moisture.
  4. In a large bowl, toss wings with baking powder and salt until evenly coated.
  5. Arrange wings skin-side up on the rack and bake on the lower shelf for 30 minutes.
  6. Increase oven temperature to 425°F (220°C), move tray to upper shelf, and bake for 40–50 minutes until crispy and golden, rotating halfway.
  7. In a separate bowl, whisk together butter, hot sauce, brown sugar, and salt for the Buffalo sauce. Keep warm.
  8. Transfer baked wings to a bowl and toss with Buffalo sauce until fully coated.
  9. For the blue cheese dip, mash blue cheese with sour cream, then mix in mayonnaise, garlic, lemon juice, milk, salt, and pepper. Adjust consistency as desired and chill.
  10. Serve wings immediately with celery sticks and the dip.
