Description

  • 5 tbsp unsalted butter, softened (70g)
  • 2 cups powdered sugar (240g)
  • 1 tsp vanilla extract (5mL)
  • 2 cups semisweet chocolate chips (340g)
  • 2 tbsp coconut oil (30mL, optional)

Instructions

  1. In a stand mixer, combine peanut butter, butter, and vanilla extract. Mix on low speed until smooth and creamy.
  2. Gradually add powdered sugar and mix on medium-low speed until a dough forms. Scrape down the bowl to ensure even blending.
  3. Roll tablespoon-sized portions of dough into balls and place them on a parchment-lined baking sheet. Chill for at least 20 minutes or until firm.
  4. In a microwave-safe bowl, melt the chocolate chips and coconut oil at 50% power, stirring every 30 seconds until smooth. Let cool to room temperature.
  5. Using a toothpick, dip each chilled peanut butter ball about three-fourths of the way into the melted chocolate, leaving a small circle of peanut butter visible.
  6. Place the dipped Buckeyes on parchment paper. Remove the toothpick and smooth the hole with a knife or spatula.
  7. Chill until the chocolate is fully set. Store covered in the refrigerator until ready to serve.
