Ingredients
Unsalted butter, melted – 1 1/2 cups
Granulated sugar – 2 1/4 cups
Light brown sugar, packed – 1 1/2 cups
Large eggs – 6
Vegetable oil – 3 tbsp
Pure vanilla extract – 2 tbsp
All-purpose flour – 2 1/4 cups
Cocoa powder – 1 1/2 cups
Salt – 1 1/2 tsp
Your favorite ice cream flavor (non-alcoholic) – 1.5 quarts
Instructions
Preheat oven to 350°F (180°C)
Grease two 8×8-inch pans and line with parchment paper with overhang
In a bowl, combine flour, cocoa powder, and salt
In another bowl, mix melted butter, granulated sugar, brown sugar, and eggs until smooth
Add vegetable oil and vanilla extract to wet ingredients
Gradually mix dry ingredients into wet mixture at reduced speed until combined
Divide batter between prepared pans and smooth surfaces
Bake for 30-40 minutes until toothpick comes out clean
Cool in pans for 10 minutes, then lift using parchment paper and cool completely on racks
Freeze brownies for at least 2 hours until firm
Scoop 8 equal balls of ice cream and place between two brownie halves to form sandwiches
Freeze overnight before serving
