Description

This Broccoli, Rice, Cheese, and Chicken Casserole is the ultimate one-pot comfort food. Made with tender chicken, fluffy rice, fresh broccoli, and plenty of melted cheddar cheese, it comes together in just 30 minutes for a hearty and family-friendly meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 boneless skinless chicken breasts, cut into small cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 3/4 cup uncooked long grain rice
  • 10 ounces cream of chicken soup (1 can)
  • 2 cups low sodium chicken broth
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large ovenproof skillet. Add chopped onion and cubed chicken. Cook on medium heat for about 5 minutes, until chicken begins to brown and is no longer pink. Season with salt and pepper.
  2. Stir in garlic and cook for 30 seconds until aromatic.
  3. Add uncooked rice, cream of chicken soup, and chicken broth. Bring to a boil, then reduce heat, cover, and cook for about 15 minutes, stirring occasionally, until rice is tender.
  4. Stir in broccoli florets and half the shredded cheddar cheese. Cook for 2 more minutes, until broccoli softens.
  5. Top with remaining cheese and place skillet under the broiler for 2–3 minutes, until the cheese melts and turns golden brown.
  6. Remove from oven, garnish with fresh parsley, and serve warm.

Notes

  • Use fresh or frozen broccoli, but pat frozen broccoli dry to avoid excess water.
  • Brown rice requires more broth and additional cooking time.
  • Shredded rotisserie chicken can be substituted to save time.
  • You can assemble the casserole ahead up to step 2 and refrigerate overnight before finishing the recipe.
  • Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
