Description
This Broccoli, Rice, Cheese, and Chicken Casserole is the ultimate one-pot comfort food. Made with tender chicken, fluffy rice, fresh broccoli, and plenty of melted cheddar cheese, it comes together in just 30 minutes for a hearty and family-friendly meal.

- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 boneless skinless chicken breasts, cut into small cubes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 3/4 cup uncooked long grain rice
- 10 ounces cream of chicken soup (1 can)
- 2 cups low sodium chicken broth
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large ovenproof skillet. Add chopped onion and cubed chicken. Cook on medium heat for about 5 minutes, until chicken begins to brown and is no longer pink. Season with salt and pepper.
- Stir in garlic and cook for 30 seconds until aromatic.
- Add uncooked rice, cream of chicken soup, and chicken broth. Bring to a boil, then reduce heat, cover, and cook for about 15 minutes, stirring occasionally, until rice is tender.
- Stir in broccoli florets and half the shredded cheddar cheese. Cook for 2 more minutes, until broccoli softens.
- Top with remaining cheese and place skillet under the broiler for 2–3 minutes, until the cheese melts and turns golden brown.
- Remove from oven, garnish with fresh parsley, and serve warm.
Notes
- Use fresh or frozen broccoli, but pat frozen broccoli dry to avoid excess water.
- Brown rice requires more broth and additional cooking time.
- Shredded rotisserie chicken can be substituted to save time.
- You can assemble the casserole ahead up to step 2 and refrigerate overnight before finishing the recipe.
- Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
