Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together flour, baking powder, sugar, and salt.
- Grate the cold butter using a box grater and add it to the flour mixture. Toss until mixture resembles coarse crumbs.
- Pour in cold milk and stir just until combined—do not overmix.
- Transfer dough to a floured surface and gently bring it together with your hands.
- Fold the dough over itself 5–6 times to create layers, being careful not to overwork it.
- Flatten the dough to 1 inch thickness using your hands (not a rolling pin).
- Cut biscuits using a floured 2 ¾-inch round biscuit cutter and place them on the baking sheet, less than ½ inch apart.
- Rework dough scraps to make additional biscuits.
- Bake for 12 minutes or until the tops are just starting to turn golden.
- Brush with melted salted butter if desired, and serve warm.

- Keep butter and milk as cold as possible for flaky biscuits.
- Do not twist the cutter when cutting—press straight down.
- You can substitute buttermilk or 2% milk if needed.
