  • 3/4 cup heavy cream
  • 3 tablespoons Thousand Island or Big Mac-style sauce
  • 1 cup baby spinach (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (if needed for cooking)
  • Shredded lettuce for garnish

Instructions

  1. In a large cold skillet, cook chopped bacon over medium heat until crispy. Transfer to a plate lined with paper towels and set aside.
  2. Season chicken pieces with salt and pepper. In the same skillet, sear chicken until golden brown and fully cooked, about 6-8 minutes. Remove and set aside with bacon.
  3. Add garlic and onion to the skillet. Sauté until fragrant and lightly golden, about 1 minute.
  4. Pour in heavy cream and stir in the Big Mac-style sauce. Bring to a gentle simmer.
  5. Add shredded cheese and stir until melted into a smooth sauce.
  6. Return chicken and bacon to the skillet, stirring to coat evenly with the sauce.
  7. Mix in diced pickles and spinach (if using). Cook for another 2-3 minutes until heated through.
  8. Top with shredded lettuce before serving for that signature Big Mac crunch.
