This Pecan Pie Cobbler is a gooey, caramel-filled Southern-inspired dessert that combines the best parts of a classic pecan pie with the ease of a cobbler. Featuring a buttery cake layer, toasted pecans, and a self-saucing caramel base, it’s the perfect make-ahead holiday dessert for any gathering.

- ½ cup all-purpose flour
- ½ cup whole wheat flour or additional all-purpose flour
- ¾ cup packed light brown sugar
- 1½ teaspoons baking powder
- ½ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ½ cup 2% milk
- 2 tablespoons dark rum or an additional 2 teaspoons pure vanilla extract and 1 tablespoon additional milk
- 1 teaspoon pure vanilla extract
- ⅔ cup packed brown sugar (light or dark)
- 1 cup chopped pecans
- 1½ cups very hot water
- Vanilla ice cream or whipped cream, for serving
Instructions
- Preheat the oven to 350°F (175°C) and place butter in an 8×8-inch baking dish. Let it melt in the oven for about 5 minutes, then remove and set aside.
- In a medium mixing bowl, whisk together all-purpose flour, whole wheat flour, brown sugar, baking powder, salt, and cinnamon.
- Stir in milk, rum (or vanilla), and mix just until the batter is smooth and the flour disappears.
- In a separate bowl, combine the brown sugar and chopped pecans for the topping.
- Pour the batter evenly over the melted butter without stirring.
- Sprinkle the brown sugar-pecan mixture evenly over the batter.
- Slowly pour very hot water over the top of the entire mixture without stirring.
- Place the baking dish on a parchment-lined baking sheet and bake uncovered for 30–40 minutes, or until the top is golden brown and set.
- Remove from oven, let cool for 20–25 minutes to allow the caramel to thicken, then serve warm with vanilla ice cream or whipped cream.

- Do not stir the layers — this allows the caramel sauce to form naturally at the bottom.
- Use fresh, high-quality pecans for the best flavor.
- Store leftovers in the refrigerator for up to 3 days.
- To reheat, bake at 325°F until warmed through.
