Description

  • 2 cloves garlic, minced
  • 1/4 medium onion, diced
  • 1 pound ground beef
  • 1 tablespoon tomato paste
  • 2 chipotle peppers in adobo sauce, minced (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 cup water
  • 18 corn tortillas
  • 1 1/2 cups shredded cheese
  • 23 cups frying oil or 12 tablespoons for baking

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add garlic and onion, sauté for 3 minutes until softened.
  2. Add ground beef and cook for 8 minutes until browned.
  3. Stir in tomato paste, chipotle peppers, chili powder, salt, cumin, oregano, and water. Cook for 3 more minutes until most of the liquid is absorbed. Remove from heat.
  4. Wrap tortillas in a damp paper towel and microwave for 1–2 minutes until warm and pliable.
  5. Place a spoonful of beef mixture and cheese on each tortilla. Roll tightly and secure with a toothpick.
  6. To Fry: Heat oil to 350°F. Fry taquitos in batches for 1.5–2 minutes per side until golden brown. Drain on paper towels.
  7. To Bake: Preheat oven to 425°F. Place taquitos on a parchment-lined baking sheet. Spray or brush with oil. Bake for 15–20 minutes until crispy and golden.
  8. Remove toothpicks and serve with toppings like sour cream, guacamole, and salsa.
