  • 1/2 lb brown mushrooms, thickly sliced
  • 1 garlic clove, minced
  • 1 Tbsp all-purpose flour
  • 1 cup beef broth
  • 3/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp chopped green onion or parsley, for garnish
  • 812 oz egg noodles, cooked, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef strips in a single layer and sear 1 minute per side until browned. Cook in batches to avoid overcrowding. Remove beef and set aside.
  2. In the same pan, melt butter. Add onions and mushrooms, sautéing 6–8 minutes until soft and lightly browned.
  3. Stir in garlic and cook for 1 minute until fragrant. Add flour and cook for another minute, stirring constantly.
  4. Pour in beef broth, scraping the bottom to release any browned bits. Add heavy cream and simmer 1–2 minutes until slightly thickened.
  5. Temper sour cream by mixing a few spoonfuls of hot sauce into it, then stir back into the pan. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Stir to combine.
  6. Return seared beef and any juices to the pan. Simmer gently until heated through and sauce is creamy and smooth.
  7. Serve over cooked egg noodles and garnish with chopped parsley or green onions.

  • Use tender beef cuts like top sirloin, ribeye, or tenderloin for the best texture.
  • Temper sour cream before adding to prevent curdling.
  • Do not overcook the beef; quick searing keeps it tender.
