- 1 lb top sirloin steak, thinly sliced into strips
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 1/2 medium onion, finely chopped
- 1/2 lb brown mushrooms, thickly sliced
- 1 garlic clove, minced
- 1 Tbsp all-purpose flour
- 1 cup beef broth
- 3/4 cup heavy whipping cream
- 1/4 cup sour cream
- 1 Tbsp Worcestershire sauce
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp chopped green onion or parsley, for garnish
- 8–12 oz egg noodles, cooked, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef strips in a single layer and sear 1 minute per side until browned. Cook in batches to avoid overcrowding. Remove beef and set aside.
- In the same pan, melt butter. Add onions and mushrooms, sautéing 6–8 minutes until soft and lightly browned.
- Stir in garlic and cook for 1 minute until fragrant. Add flour and cook for another minute, stirring constantly.
- Pour in beef broth, scraping the bottom to release any browned bits. Add heavy cream and simmer 1–2 minutes until slightly thickened.
- Temper sour cream by mixing a few spoonfuls of hot sauce into it, then stir back into the pan. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Stir to combine.
- Return seared beef and any juices to the pan. Simmer gently until heated through and sauce is creamy and smooth.
- Serve over cooked egg noodles and garnish with chopped parsley or green onions.

- Temper sour cream before adding to prevent curdling.
