  • ¾ cup BBQ sauce (use your preferred brand)
  • ⅓ cup diced jarred jalapeño pepper rings (tamed or hot)
  • 12 slider rolls (e.g., potato dinner rolls)
  • ⅓ cup thinly sliced red onion
  • ¼ cup cilantro leaves, roughly chopped
  • 1¼ cups shredded pepper Jack cheese
  • 1 tablespoon melted butter
  • ¼ teaspoon granulated garlic or garlic powder
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 350°F. Line a baking sheet or pan with parchment paper or foil.
  2. In a large mixing bowl, combine shredded rotisserie chicken, ½ cup BBQ sauce, and diced jalapeño rings. Stir well.
  3. Slice slider buns in half and place the bottom halves on the baking sheet.
  4. Distribute the chicken mixture evenly across the bottom buns.
  5. Drizzle about 1 teaspoon of remaining BBQ sauce on each slider.
  6. Add 2–3 red onion slices and some cilantro to each slider.
  7. Top with shredded pepper Jack cheese and cover with top buns.
  8. Cover the baking pan with foil and bake for 12 minutes.
  9. In a small bowl, mix melted butter with garlic powder.
  10. Remove foil, brush the top of each bun with the butter mixture, sprinkle with black pepper, and bake uncovered for an additional 5–8 minutes, until buns are toasted and cheese is melted.

  • Use mild or hot jalapeños based on your spice preference.
  • Slice rolls in halves more evenly by separating into two groups of 6 if they come attached.
  • Avoid overly sweet buns like Hawaiian rolls for this recipe.
