  • 1/2 teaspoon fine salt
  • 1/4 cup raspberry jam
  • 1/4 cup apricot jam

Instructions

  1. Cream together the butter and sugar in a large bowl until light and fluffy.
  2. Add the egg and vanilla bean paste, mixing until fully combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture and mix until a soft dough forms.
  4. Divide the dough into two equal portions and shape each into a log. Wrap in plastic wrap and chill for at least 1 hour, or until firm.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Slice chilled dough into 1/2-inch rounds and place on the baking sheets about 2 inches apart.
  7. Gently press your thumb into the center of each slice to create an indentation.
  8. Fill each center with a small amount of raspberry or apricot jam.
  9. Bake for 12–15 minutes, or until the edges are golden brown.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
