These Bacon and Cheese Breakfast Sliders combine fluffy scrambled eggs, crispy bacon, and melted cheese layered inside soft Hawaiian rolls, brushed with a buttery everything seasoning topping. Perfect for meal prep, brunch gatherings, or an easy grab-and-go breakfast that everyone will love.

- 1 (12 oz) package Hawaiian rolls (12 count)
- 10 large eggs
- 1/4 cup whole milk
- 8 slices cooked bacon, crumbled or chopped
- 6 slices American cheese (or your preferred cheese)
- 4 tbsp unsalted butter, melted
- 2 tsp everything seasoning
- 1 tsp dried minced onion
- Pinch of kosher salt and black pepper
- Minced fresh parsley (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13” baking pan with cooking spray.
- Using a serrated knife, slice the Hawaiian rolls horizontally to separate the tops and bottoms. Place the bottom halves in the prepared baking pan.
- In a bowl, whisk together eggs, milk, salt, and pepper. Heat a skillet over medium heat, add a small amount of oil or cooking spray, and cook the eggs until scrambled and just set.
- Spread the scrambled eggs evenly over the bottom rolls, then top with the chopped bacon and cheese slices.
- Place the top halves of the rolls on top of the cheese layer.
- In a small bowl, whisk together melted butter, everything seasoning, dried onion, salt, and pepper. Brush or pour the mixture evenly over the rolls.
- Cover with foil and bake for 15–20 minutes to melt the cheese. Uncover and bake another 3–5 minutes until golden brown.
- Sprinkle with minced parsley, slice into individual sliders, and serve warm.
Notes
- Use any type of slider rolls—Hawaiian, potato, or butter rolls all work well.
- To make ahead, assemble the sliders without the butter topping and refrigerate overnight. Add topping before baking.
- Freeze unbaked sliders for up to 3 months, then thaw overnight before baking.
- Try adding diced onions, hot sauce, or different cheeses for extra flavor.
- Cook scrambled eggs until just set to avoid soggy rolls.
