Description

These Bacon and Cheese Breakfast Sliders combine fluffy scrambled eggs, crispy bacon, and melted cheese layered inside soft Hawaiian rolls, brushed with a buttery everything seasoning topping. Perfect for meal prep, brunch gatherings, or an easy grab-and-go breakfast that everyone will love.

  • 1 (12 oz) package Hawaiian rolls (12 count)
  • 10 large eggs
  • 1/4 cup whole milk
  • 8 slices cooked bacon, crumbled or chopped
  • 6 slices American cheese (or your preferred cheese)
  • 4 tbsp unsalted butter, melted
  • 2 tsp everything seasoning
  • 1 tsp dried minced onion
  • Pinch of kosher salt and black pepper
  • Minced fresh parsley (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13” baking pan with cooking spray.
  2. Using a serrated knife, slice the Hawaiian rolls horizontally to separate the tops and bottoms. Place the bottom halves in the prepared baking pan.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Heat a skillet over medium heat, add a small amount of oil or cooking spray, and cook the eggs until scrambled and just set.
  4. Spread the scrambled eggs evenly over the bottom rolls, then top with the chopped bacon and cheese slices.
  5. Place the top halves of the rolls on top of the cheese layer.
  6. In a small bowl, whisk together melted butter, everything seasoning, dried onion, salt, and pepper. Brush or pour the mixture evenly over the rolls.
  7. Cover with foil and bake for 15–20 minutes to melt the cheese. Uncover and bake another 3–5 minutes until golden brown.
  8. Sprinkle with minced parsley, slice into individual sliders, and serve warm.

Notes

  • Use any type of slider rolls—Hawaiian, potato, or butter rolls all work well.
  • To make ahead, assemble the sliders without the butter topping and refrigerate overnight. Add topping before baking.
  • Freeze unbaked sliders for up to 3 months, then thaw overnight before baking.
  • Try adding diced onions, hot sauce, or different cheeses for extra flavor.
  • Cook scrambled eggs until just set to avoid soggy rolls.
