  • 2 cloves garlic, minced
  • 1 1/2 cups heavy whipping cream
  • 1 egg yolk
  • 12 ounces fettuccine
  • 1/2 cup Parmigiano-Reggiano cheese, grated
  • 1/2 cup pecorino-Romano cheese, grated, plus more for garnish
  • 12 turns freshly-cracked black pepper, plus more to serve
  • Kosher salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine until just shy of al dente.
  2. While the pasta cooks, melt the butter in a deep skillet over medium heat. Add minced garlic and black pepper. Cook for about 1 minute until fragrant, without browning the garlic.
  3. In a bowl, whisk together heavy cream, egg yolk, and a pinch of salt. Pour into the skillet with the butter and garlic. Lower heat to medium-low and stir gently until warm but not boiling.
  4. Transfer the cooked pasta directly into the sauce, allowing some pasta water to come along. Toss to coat the pasta in the sauce.
  5. Add grated cheeses and continue folding until the sauce thickens and clings to the pasta. Add reserved pasta water, a tablespoon at a time, if needed to loosen the sauce.
  6. Serve immediately, garnished with extra cheese, cracked black pepper, and chopped parsley if desired.
