This Asparagus Tomato Salad is a quick and healthy summer side dish made with roasted asparagus, juicy cherry tomatoes, freshly grated Parmesan cheese, and a drizzle of sweet balsamic glaze.   • 500 g asparagus (about 20 spears): adds earthy flavor and crisp texture
  • 400 g baby Roma or cherry tomatoes: brings sweetness and color
  • 1 tbsp olive oil: helps roast the vegetables evenly
  • 1/2 cup grated Parmesan cheese: provides nutty umami flavor
  • 20 ml balsamic glaze: adds tangy sweetness and shine
  • Salt and pepper to taste: enhances all the flavors
  • 1 tsp extra virgin olive oil (for finishing): adds richness before serving

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Trim the woody ends of the asparagus, wash and pat dry. Cut tomatoes in half and toss with half the olive oil.
  3. Place asparagus on one side of the tray and tomatoes on the other. Drizzle with remaining olive oil, season with salt and pepper, and sprinkle most of the Parmesan cheese, reserving a bit for garnish.
  4. Roast for 15–20 minutes, or until asparagus is tender and slightly golden and tomatoes are caramelized.
  5. Transfer roasted asparagus to a serving platter and arrange tomatoes on top. Drizzle with balsamic glaze and a touch of extra virgin olive oil. Sprinkle remaining Parmesan before serving. Enjoy warm or at room temperature.

  • Dry asparagus well before roasting to achieve crisp texture.
  • Do not overcrowd the baking tray to allow proper roasting.
  • Use freshly grated Parmesan for best flavor and melt.
