  • Diet: Vegetarian

Description

Asparagus Egg Toast is a quick, healthy, and elegant breakfast that combines crisp asparagus, perfectly cooked eggs, and golden toasted bread. This spring-inspired dish is rich in flavor, nutrients, and texture — perfect for busy mornings, brunch gatherings, or a light lunch.

Ingredients

Scale
  • 68 asparagus spears: fresh and tender, trimmed of woody ends
  • 2 eggs: soft-boiled or poached for creamy yolks
  • 2 slices of sourdough or whole-grain bread: hearty base with crunch
  • 1 tablespoon butter or olive oil: for toasting the bread
  • 1 tablespoon grated Parmesan or crumbled feta cheese: adds savory richness
  • 1 teaspoon lemon juice or zest: brightens up the flavor
  • Salt and black pepper: to taste, enhances all flavors
  • Fresh herbs (chives, dill, or parsley): for garnish and aroma

Instructions

  1. Trim the asparagus and blanch or sauté it in salted water or olive oil for 3–4 minutes until tender-crisp. Season lightly with salt and pepper.
  2. Toast the bread slices with butter or olive oil until golden brown and crunchy.
  3. Cook the eggs: soft-boil for 6–7 minutes or poach for 3–4 minutes until the whites are set but yolks remain runny.
  4. Arrange the asparagus spears neatly over the toasted bread slices.
  5. Place one egg on top of each toast and gently break the yolk to create a rich sauce.
  6. Sprinkle with cheese, drizzle with lemon juice or zest, and finish with a pinch of salt and pepper.
  7. Garnish with fresh herbs and serve immediately while warm.

Notes

  • Use fresh, thin asparagus stalks for even cooking and best texture.
  • To make it gluten-free, use gluten-free bread.
  • For extra protein, add smoked salmon or sliced avocado.
  • Vegan option: use vegan bread and tofu scramble instead of eggs.
  • Reheat gently in a skillet to maintain texture if made ahead.
