- 4 large eggs
- 6 slices of bacon
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard

Instructions
- Bring a large pot of salted water to a boil and blanch the asparagus for 2–3 minutes until bright green and tender-crisp. Transfer immediately to an ice bath to stop cooking, then drain and set aside.
- In a medium saucepan, boil the eggs for 9–10 minutes for hard-boiled texture. Cool in an ice bath, peel, and chop.
- In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels and crumble once cooled.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to create the dressing.
- Combine asparagus, chopped eggs, and bacon in a large bowl. Drizzle dressing and toss gently to coat.
- Top with feta cheese and parsley if desired. Serve immediately or chill before serving.
