This homemade apple pie recipe features a flaky, buttery crust filled with tender Granny Smith apples, sweetened with brown and white sugar, and spiced with cinnamon and nutmeg. It’s the perfect classic dessert for holidays or any cozy gathering.

- 2 (9″) pie crusts
- 7 large Granny Smith apples, peeled, cored, and sliced
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (loosely packed)
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- Zest of half a lemon
- 1 large egg (for egg wash)
- 2 tablespoons sanding sugar (optional)
Instructions
- Prepare the pie dough ahead of time and chill for at least 1 hour, or use a store-bought crust.
- Preheat oven to 400°F (204°C) and position rack in the center.
- In a large bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, lemon juice, and zest. Toss well.
- Let the dough sit at room temperature for 5–10 minutes. Roll out one disc into a 12” circle and place into a deep-dish pie plate.
- Fill the crust with apple mixture, discarding any excess liquid.
- Roll out the second dough disc and place it over the filling. Trim excess dough and crimp the edges to seal.
- Cut 4 slits in the top crust for steam to vent.
- Brush the crust with egg wash and sprinkle with sanding sugar.
- Wrap a strip of foil around the edge of the crust as a pie shield to prevent over-browning.
- Bake at 400°F for 25 minutes. Remove the shield, reduce oven to 375°F, and bake another 30–35 minutes.
- Let the pie cool at room temperature for at least 3 hours before serving.
Notes
- Use firm apples like Granny Smith, Honeycrisp, or Pink Lady for best texture.
- Discard excess juice from the apple mixture to prevent a soggy bottom.
- Always chill pie dough before rolling to improve flakiness.
- The pie can be made ahead and stored at room temperature for up to 2 days or refrigerated for 5 days.
- To freeze: assemble and freeze before baking or freeze baked pie for up to 3 months.
